If you read through the start of the thread, PZ tried to switch to GMT and it created a wave of problems with server drift and strange script bugs for the customers, so they moved back to EST.
I really don't give two hoots either way. It's no more difficult to use my GMT offset than it is to take my GMT offset and subtract 5 (EST = GMT - 5 ).

I'd argue that running GMT isn't universal. Most servers are set to their geographic locals to facilitate time/date stamp comprehension and whatnot - unless you need parity between a geographically distributed network.
Incidentally, mail servers should automatically correct for time zone if your time zone message headers are configured properly.
